One-Pan Chicken Sausage and Potatoes


3 tablespoons extra-virgin olive oil

1 12-ounce package smoked chicken-apple sausage, cut into 1-inch pieces

1 lb small red potatoes, quartered

2 onions, thickly sliced

2 bulbs fenneled, trimmed, quartered, cored and sliced into thick wedges, fronds reserved

Kosher salt and freshly ground pepper

1 tablespoon tomato paste

2 tablespoons apple cider vinegar

1 tablespoon honey
