Pork Carnitas Quesadillas

Ingredients

 

PORK

  • One 4-pound pork shoulder

  • 1 strip orange zest

  • 1/4 cup chopped white onion

  • 5 cloves garlic, smashed

  • 1 bay leaf

  • 12 ounces Mexican lager beer

  • 2 cups low-sodium chicken stock

  • 2 teaspoons salt

  • 2 teaspoons Mexican oregano

  • 2 teaspoons crushed red pepper flakes

  • 1/2 teaspoon ground cumin

 

QUESADILLAS

  • 16 flour tortillas

  • 4 cups shredded Oaxacan or mozzarella cheese

  • 1 cup diced white onion

  • 1/2 cup finely diced red jalapeño

  • 6 lime wedges

  • Tomatillo salsa

  • Crema
