6 slices bacon, cut into 1/2-inch pieces

3 tablespoons extra virgin olive oil, divided

1/2 medium sweet onion, finely chopped

1 1/2 medium sweet onions, thinly sliced

1 1/2 pounds ground sirloin

2 teaspoons Worcestershire sauce

1 teaspoon Tabasco sauce

1 tablespoon steak seasoning

4 crusty poppy seed or plain Kaiser rolls, split

4 slices smoked Gouda cheese

1/4 cup steak sauce (such as A1 or Lea & Perrins)
