Sweet Melissa's Smashed Potatoes


Bag of creamer potatoes

2 tablespoons or so of olive oil.

Generous amount of salt


1. Boil potatoes until they're fork-tender (about 20 min).

2. Remove from pot and drain

3. Arrange on a baking sheet and then smash with a towel or potato masher (careful, they'll be hot!)

4. Sprinkle with olive oil and salt

5. Bake at 425° for 25 min.

6. Remove and enjoy as-is, or add parmesan cheese, pesto, or create a potato toppings bar with bacon bits, cheese, etc.!
